Roasted Chickpeas

Sometimes I crave snacks with a lil crunch. Chickpeas are part of the legume family and are packed with vitamins, minerals, and fiber. Chickpeas are also an excellent source of protein that can aide in vegan’s diet.

Ingredients:

  • 1 Can of Chickpeas, Drained

  • Olive Oil

  • 1/2 TSP Cumin

  • 1/4 TSP Cayenne Pepper

  • 1 TSP Smoked Paprika

  • 1/4 TSP Salt

Directions:

  1. Drain chickpeas and gently roll in a paper towel to remove the outer layer

  2. Toss chickpeas in olive oil

  3. Preheat to 350 degrees, line baking sheet with parchment paper

  4. Spread chickpeas on baking sheet and bake fro 25 minutes

  5. Toss chickpeas in seasoning
